Chef BBQ experience, Mauritius by Obelix

As abundant and convenient resort living is, after several days of endless buffets, I yearn for simple home cooked food, tailored to my taste buds rather than slabs of pre-selected food which I may not necessarily desire laid out for me.

With this in mind, we opted to stay in a villa with our personal chef. The experience was like having a genie in a bottle. Gino, our genie was able to conjure up whatever dish our taste buds desired. For our last supper before we headed home, we decided to have a seafood BBQ. As the dying rays of sun disappeared on the horizon, Gino stoked the charcoal embers by the pool over looking Pereybere beach, and we watched on, entranced.

Gino prepared a few pork sausages to start with. Then came the chicken thighs, grilled to perfection with a sweet glaze. These were a tie for my pick of the night.

Then came the hard core seafood. There was a local fish called “sacred dog”, a literal translation of its French name. It was a meaty white fish which Gino marinaded with garlic.

Octopus is a popular seafood in Mauritius, and it would be remiss if we didn’t have this on the barbie.

Then, then, came the piece de resistance, BBQ prawns. Massive local prawns longer than my knife. Gino with much showmanship, flambeed them with Jamaican rum (see first pic). It’s hard to cook prawns that size whilst maintaining its juiciness. But Gino managed that with skill.

Alongside the BBQ we had a smoked marlin salad, garlic broccoli and an avocado salad.

I’m writing this whilst rubbing my food baby. One of the best things about holidays are memories. And this meal is something to remember.
